I’ve made this many times before. Seb is a massive fan of this dish. There was a while a few months back, that I would make triple helpings of this on a Sunday for Seb to have every weekday during lunch.
Cookbook: The Kind Diet
Ease of preparation: 5 out of 5. It’s a one pot meal, which although takes a while to cook, most of it is idle. It can easily be doubled or tripled and is fantastic for taking to work as the flavours just keep getting better as the days go on. I didn’t add the bread croutons at the end, but no matter. It was still excellent.
Accessibility of ingredients: 5 out of 5. The ingredients would be available in any supermarket of any size in the world. There are a few different spices and herbs which you might not have, but
Cost: 5 out of 5. All very cheap ingredients. The dish is essentially brown lentils, potatoes, soy sauce, carrot and celery cooked for quite a while to let all the flavours mingle.
Taste: 5 out of 5 This is really a delicious recipe. The spice blend is spot on. I took a portion to my friend at work who is currently following a high nutrient/low calorie weight loss diet and he loved the smell of this dish.
Comments: This is without a doubt going to stay in my repertoire. It’s pure comfort food and a dish that Seb really loves, and I do too of course.
