APPETITE FOR REDUCTION DAY 4 – EVERYDAY QUINOA AND CHICKPEA SALAD

I love this recipe. It’s so simple and the dressing is to die for. There are stacks of green leafies and on top is a grain salad from quinoa (a complete protein, cooks in only 15 minutes, wholegrain and very tender) with chickpeas, red onion and grated carrot. The dressing is a total winner. No oil, but so creamy due to the whole cashew nuts blended in with the dressing. This is a stellar salad dressing. Make double or triple and smoother it on all your salads during the week. Loads of fibre (11grams) which is more than most omnis get in a whole day. This dish also has 12 grams of protein and only 290 calories for a really big serve. Huzzah!
